our story


I discovered my passion for cooking at the age of 12 when I was placed at Alpha Boys School, an Orphanage operated by the Sisters of Mercy in Kingston, Jamaica.


I was asked by Sister Mary Goretti “So Raymond what do you want to be in life?” I went into

deep thought as I began to seriously consider my future career, but I had no ready answer.

One day as I was walking, something struck me, it was a newspaper and in it there was an article about a very well-known Chef who spoke of his life experiences.

This had a profound effect on me and gave me inspiration, I immediately went to Sister Goretti and said, “I want to be a Chef”.

Within a few months she had arranged for me to join the St John Bosco School another Orphanage operated by the Sisters of Mercy which specialised in culinary training.

At the age of 15, I had joined St John Bosco School and there I met Mr Newton Coote who took me under his wing and taught me everything I needed to learn in the culinary arts, it was there my love for cooking grew.

As I developed as a chef, I began cooking for various events and whilst doing this I met a number or people who saw the potential in me and encouraged me to follow my dream.


21 years later I am extremely pleased and proud to say that my passion for cooking

has led me to fulfil my dream.


In 2023, I opened my first restaurant, and I am now able to share my love for food with the world. I take pleasure in bringing joy and smiles to people’s faces
